Try Bill Granger's delish "fish pie" this weekend - it really was very good and so quick and easy.
800g potatoes - peeled and cut into chunks (I did not peel the potatoes - as we like the skin)
1 glove garlic - crushed
4 spring onions - sliced
zest and juice of 1 lemon
salt and pepper
2 tablespoons olive oil
1/2 cup crème fraiche
3 anchovy fillets - finely chopped
1 tblsp capers - rinsed
parley leaves - chopped
800g mixed fish - (I used half salmon and half white fish) cut into chunks
handful baby spinach
Cook potatoes in salted water - until very tender.
Drain - return to pot and add garlic, spring onions and lemon zest. Stir in olive oil, breaking up potatoes as you go.
Season with salt and pepper.
Combine crème fraiche, capers, anchovy fillets, parsley and lemon juice. Sir well and season. Fold through fish and spinach.
Spoon into a greased dish and top with rough potato mash.
Drizzle with olive oil and bake- uncovered - at 200deg C - for 20 min or until golden.
